虹の煌めき
にじのきらめきは、コシヒカリと同等の おいしさで、お米の粒ひとつひとつが大きく、食べ応えがあります。 その名の通り、ツヤのある美しい炊きあがりも特徴です。
もっちりとした食感で粘りが強く、お米の甘みも強いので、濃い味のおかずにも負けません。
What about Niji no Kirameki Rice?
“Niji no Kirameki” is a new type of rice developed only recently in 2018.
It was named “Niji no Kirameki’’ because it has a rainbow-like exterior and the rice comes out very glossy when it iscooked. In recent years, the quality of rice has been negatively affected by the increase in temperature and by
inevitable progress of global warming.
This type of rice was developed to cope with this undesired situation as it has excellent high temperature tolerance and it is easier to grow, cultivate and harvest. As a result, it has 15% higher production rate than Koshihikari and the rice culms of Nijinokirameki are much shorter and the rice thereforedoes not easily fall over. This type of rice is also very resistant to rice diseases, making it a rice much easier grown and harvested than other types of Japanese rice.
Taste and Characteristics Nijinokirameki is as delicious as Koshihikari. Its grains are large. And it has a beautiful glossy finish. It has a chewy texture, strong sweetness and stickiness, making it ideal for any side dish. It is also very good once cold as it retains its softness and does not harden, and therefore it is very good for onigiri.
Overall this rice has a very good balance and has very good texture resembling Akitakomachi rice.
The Nijinokirameki from Niigata prefecture is probably most recommended as it comes very close to the amazing taste of Koshihikari.
Best dishes that go well with Nijinokirameki The rice is sweet and sticky and has beautiful gloss about it. It is
recommended for onigiri or to be eaten by itself as a side dish to other dishes. It is also good for sushi especially commercial use as it is slightly cheaper and it is easier to work with. It does not become soggy and
works well with different ingredients. It is also recommended to use this rice for donburi Japanese rice bowls.
